Key Lime Pie Recipe From The Dessert Diet Club

Healthy, Sugar-Free Key Lime Pie Picture

I really wanted to try this recipe, simply because I have heard them mention key lime pie in The Big Bang Theory. The first time I made it was when a friend came to visit us. He loved it, and when I woke up the next morning (he slept over by the way), I saw just how much he did. Most of it was gone, except for a single slice he left for Jonathan.

Now that is a compliment. I swear I am still glowing.


Use a crust recipe in the Back to the Basics section.



1 cup cream or coconut cream

3 tbsp xylitol or 4 tbsp erythritol

6 eggs, large

½ cup + 2 tbsp lime juice

4 tbsp lime zest, finely grated


Set aside your prepared crust. For the filling, pour the cream into a pot and heat it over a medium temperature. Add the sweetener and stir. Now whisk the eggs with an electric mixer (or by hand if you want an arm workout or have no other option). When the eggs are fluffy, pour in the lime juice slowly while still mixing. The eggs will start to thicken thanks to a chemical reaction with the lime juice.

When the cream has started boiling, remove the pot from the heat, but reduce the heat to low, and slowly start to add in the egg and lime mixture. Do not stop whisking. Place the pot back onto the stove for about a minute, but do not let it boil. Remove from the heat and leave to cool for a bit before whisking in the zest 

Pour the cream over the crust and bake the pie at 150°C for 15 minutes. Let the pie cool down before serving.
